Papa Jeabert was a pioneer in growing the Peter Pepper commercially. Before Papa came along, this sassy little pepper was grown only as an ornamental because of its interesting shape. Today, all the Peter Peppers grown for Spice de Terre come from fields in the heart of Cajun country.

Following the pepper harvest, Papa Jeabert dries them and then grinds them into a fine powder which is very hot because the Peter Pepper is 10 times hotter than a jalapeno. During the blending process, the fire of the Peter Pepper is tempered with just the right amount of dried onion and real lemon, a dash of cayenne, even a little papaya, which is a natural meat tenderizer, and dried green and red bell peppers. Spice de Terre is the only seasoning with Peter Pepper, red bell pepper, green bell pepper and papaya.

Since this Cajun spice blend is especially low in sodium, you can sprinkle lots of it on everything.
